Finished Quarter Beef

Roasts weigh approximately 3 lbs.
Ground Beef – 1 lb packages.
Description: Halves or “sides” of beef are split evenly into two quarters with each quarter containing cuts from both the front and the back of the animal. The only difference between the two split quarters is one will contain the skirt steak, and the other the flank steak.
Contents: By weight, approximately 40% ground, 20% steaks, 20% braise, 20% roasts.

Cured/Smoked Meats and Sausages: We don’t currently have a processor that can guarantee our level of standards. As a result we aren’t able to offer these. Alternatively, you might try curing your own bacon or making your own sausage. Visit our recipe page for help.
Contents: By weight, approximately 25% ground, 30% chops and steaks, 35% roasts, 10% ribs & side pork.
Feed and Living Conditions: Our pigs live on lot’s of deeply piled straw and grass and clover pasture where they enjoy fresh air, sunshine, and clean water. We supplement their feed with Certified Organic, non-GMO, corn-free, soy-free feed that is raised and milled locally.

Whole Chicken: 2.5 to 3.5 lbs, $15 – $21 at the farm, $18 – $25 in SF Bay Area
Feed and Living Conditions: 100% of our chickens’ time is spent on pasture. We do not confine them at all, except for the first 10 to 15 days of their lives where they are kept warm in the brooder, which by the way, is also out on pasture.
In addition to the grass and bugs that they find on pasture, we give them certified organic, non-GMO, corn-free, soy-free feed that is raised and milled locally.
Size, Taste, & Nutrition: As a result of not being confined near their feed trough, and therefore eating a larger percentage of their diet from the pasture, as well as the fact they’re getting more exercise than confined birds, our chickens may be smaller and their meat more developed and flavorful than you are used to. In fact, they are the size my grandmother used to raise for her dinner table and they taste more like a wild bird than other chickens you may have tried. Their slower growth rate and greater age at processing result in a higher nutritional value.
Broiler Chicken
Description: These are a heritage breed that is slower growing than the fast-growing, double-breasted Cornish Cross chicken that most people are used to. Unlike the fast growing birds, these birds enjoy a pain-free, healthy existence and are able to walk, run, fly and express their “chickenness” while they are on our pastures. Packaged whole with necks on. Does not include feet, liver, gizzard, or heart. These may be purchased separately.
Stewing Chicken
Description: These are two-year-old layers that we’ve culled from our flock. These older birds are more nutritious than the young broiler chickens, but they require slow cooking with moist heat. Packaged whole with necks on. Does not include feet, liver, gizzard, or heart. These may be purchased separately.

Timing: We still have a few turkeys available for pickup in mid-November. We have plenty available for mid-December pickup. We’ll contact with you to firm-up the expected pick-up date.
Description: This is a deposit to reserve your Whole Turkey. Each turkey is frozen and includes neck and giblets.
Our Bourbon Red turkeys are hatched and raised on our farm. The genetics of our flock are of the highest quality and come very close to meeting the American Poultry Association’s Standard of Perfection for the Bourbon Red breed.
Feed and Living Conditions: 100% of our turkeys’ time is spent on pasture. We do not confine them at all, except for the first 20 to 30 days of their lives where they are kept warm in the brooder house, also on pasture.

Description: This is a deposit to reserve your Live Day-old Bourbon Red Turkey Poult or your Live Brooded (approx. 5 week old) Pasture-Ready Turkey. You’ll pick them up at the farm in the Spring. We’ll coordinate schedules via email.
20% Discount if you purchase the whole hatch: Our incubator can set about 170 turkey eggs per hatch. Often times though we set less than that, depending on how many eggs the turkeys are laying each week. If you purchase the whole hatch, that saves us from having to start another brood. But you’ll need to be flexible on the quantity. For this, we offer a 20% price discount.
Pasture-based Genetics
Our Turkeys are bred and selected for performance in a pasture setting free of antibiotics.

The Economics of Purchasing Full of Life Farm Poults
When purchasing poults from any hatchery for purposes of raising and selling finished turkeys, pay attention to the characteristics listed above. The purchase price should reflect the quality exhibited in these characteristics of the parent flock.
We have found other flocks of Heritage Bourbon Red turkeys whose full grown weights were as low as 66% of ours, whose fertility rates were 50% of ours, and whose mortality rates were more than 10 times higher! These kind of numbers affect the profitability of your enterprise much more than the initial purchase price of your new turkey poults.
